Berry-Lime Smoothie and/or Ice-Cream [Vitamix A2500 Ascent Series Blender]
Happy wife = happy life right? Right. BUT happy family + full bellies = even happier life. Ami-right, or AM-I- RIGHT?
My son Lincoln who’s 15 months old keeps me SO busy and with Mother’s Day being just around the corner I keep telling my husband the only “gift” I want is time, because 24 hours in a day just isn’t enough. Unfortunately he informed me that gift is unable to be fulfilled (ugh LOL) so I’ve had to implement changes in my life to ensure better time management, our Vitamix A2500 Ascent Series blender being one of them. A great thing about Lincoln being 15 months old is he eats what Kyle and I are eating (for the most part) so it eliminates having to make two separate meals/snacks. Our Vitamix blender makes it extremely easy to create recipes that are not only quick but delicious as well. Our current favourite is a tasty, mouthwatering berry-lime smoothie that uses 6 simple ingredients and can be made within a matter of minutes. If smoothies aren’t your thing you can turn this recipe from a smooth and delicious smoothie to a creamy and equally delicious bowl of ice cream.
Here’s what you need + how to make the Berry-Lime Smoothie and/or Ice-Cream:
Ingredients
2 1/2 cup vanilla almond milk (or your milk of choice)
2 oz cream cheese
1 cup of frozen mixed berries
1 banana (fresh or frozen)
1/2 cup of plain yogurt (substitute for vanilla to add extra sweetness)
1 lime juiced
Instructions
1. Place 1 1/2 cups of milk in an ice cube tray and freeze overnight. By making “milk ice cubes” you will prevent your smoothie from being watery and/or warm.
2. In the Vitamix blender combine 1 cup of almond milk, 1/2 cup of yogurt, lime juice, 2 oz cream
cheese, 1 banana, milk ice cubes.
*As a general rule of thumb add liquids first, followed by dry goods, leafy greens, fruits and
vegetables and last but not least ice and frozen foods*
3. Set the Vitamix A2500 Ascent Series blender to the Smoothie program and turn the machine on. A timer will set for 45 seconds and will gradually increase from variable 1 to 10 to ensure a fully blended smoothie.. see what I did there 😉
4. Serve immediately (and the best part is this recipe makes enough for the whole family so you don’t need to hide from your kids in the closet)
BUT WAIT remember how I said this recipe can easily be turned into ice-cream? All you have to do is substitute the 1 cup of almond milk for 1 cup of milk ice cubes, use a frozen banana instead of fresh and set the program to frozen desserts. Easy peasy!
